Ingredients
  • 1.5 cup Zucchini
  • 1.5 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the zucchini, flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs. Stir in the vegetable oil and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the walnuts.
