  • 3 medium Zucchini
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil
  • 3 large Eggs
  • 1/2 cup grated Parmesan Cheese
  • 1 cup shredded Mozzarella Cheese
  • 1/4 cup cup Breadcrumbs
  • Handful leaves Fresh Basil
  • 1/2 teaspoon teaspoon Salt
  • 1/4 teaspoon teaspoon Black Pepper
  • 1 9-inch Pie Crust
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini, onion, and garlic.
  3. Heat olive oil in a pan and sauté the sliced vegetables until softened.
  4. In a bowl, beat the eggs and mix in Parmesan cheese, mozzarella cheese, breadcrumbs, fresh basil, salt, and black pepper.
  5. Add the sautéed vegetables to the egg mixture and mix well.
  6. Line a 9-inch pie crust with the mixture.
  7. Bake in preheated oven for 40 minutes or until golden brown.
  8. Allow to rest for 10 minutes before serving.
