Grate the zucchini and squeeze out excess moisture.

In a large bowl, mix the grated zucchini, flour, sugar, vegetable oil, eggs, baking powder, cinnamon, salt, and vanilla extract.

Pour the batter into the greased cake pan and smooth the top.

Bake in the preheated oven for 40 minutes or until a toothpick inserted into the center comes out clean.
