Woolton Pie was created during World War II as a way to make use of homegrown vegetables and conserve meat supplies.

Preheat the oven to 180°C (350°F).

Peel and chop the potatoes, carrots, turnips, and cauliflower into small pieces.

Boil the chopped vegetables in a pot of salted water until tender.

In a separate pot, melt the butter and add the flour to make a roux.

Gradually whisk in the vegetable stock and milk until the sauce thickens.

Drain the boiled vegetables and mix them with the peas.

Pour the sauce over the vegetables and mix well.

Season with salt and black pepper.

Transfer the mixture to a baking dish and bake for 30 minutes or until golden brown.
