In a large bowl, combine flour, eggs, water, and salt. Knead until a smooth dough forms. Let it rest for 10 minutes.

Meanwhile, heat olive oil in a pan and sauté mushrooms, onion, and garlic until tender. Season with salt and pepper.

Roll out the dough on a floured surface and cut into circles using a round cookie cutter or a glass.

Place a spoonful of the mushroom filling in the center of each dough circle. Fold the dough over to form a half-moon shape and seal the edges.

Bring a large pot of salted water to a boil. Cook the pierogies in batches for about 3-4 minutes or until they float to the surface.

In a separate pan, melt butter and sauté cooked pierogies until golden brown.

Serve hot with sour cream, fresh parsley, and additional sautéed mushrooms if desired.
