Shepherd’s pie traditionally uses lamb or mutton, but this vegetarian version substitutes wild mushrooms for a rich and earthy flavor.

Preheat the oven to 375°F (190°C).

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the garlic and thyme, and sauté for 2 minutes.

Add the wild mushrooms and cook until they release their moisture and become tender. Remove from the skillet and set aside.

In the same skillet, melt the remaining butter and add the caramelized onions. Cook until they are golden brown and caramelized.

Sprinkle the flour over the onions and stir to combine. Cook for 1 minute.

Slowly pour in the vegetable broth and Worcestershire sauce, stirring constantly until the mixture thickens.

Return the mushrooms to the skillet and stir to combine. Season with salt and pepper.

Divide the mushroom and onion mixture among 4 individual ovenproof dishes.

Spoon the mashed potatoes over the mushroom mixture, spreading it evenly.

Sprinkle the grated cheese over the mashed potatoes.

Place the dishes on a baking sheet and bake for 25-30 minutes, or until the cheese is melted and golden.

Remove from the oven and let rest for 10 minutes before serving.
