  1. In a large mixing bowl, combine the whole-wheat flour, all-purpose flour, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add cold water, tossing with a fork until the dough forms a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  2. Preheat the oven to 375°F (190°C).
  3. Peel, core, and slice the apples. In a separate bowl, combine the granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Add the apple slices and toss to coat.
  4. Roll out half of the dough on a floured surface and place it in a 9-inch pie dish. Pour the apple mixture into the pie crust.
  5. Roll out the remaining dough and place it on top of the apple filling. Seal the edges and cut slits in the top crust to allow steam to escape.
  6. In a small bowl, beat the egg with milk. Brush the mixture over the top crust.
