In a large bowl, combine whole wheat flour, all-purpose flour, and salt.

Add unsweetened applesauce and cold water to the bowl.

Mix the ingredients until a dough forms.

Divide the dough in half and shape each half into a disc.

Wrap the discs in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

Roll out one disc of dough on a lightly floured surface to fit the pie dish.

Transfer the rolled-out dough to the pie dish and press it into the bottom and sides.

Trim any excess dough.

Fill the pie crust with your desired filling.

Roll out the second disc of dough and place it on top of the filling.

Press the edges of the top and bottom crusts together to seal.
