Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, salt, and cardamom.
  3. Cut the cold unsalted butter into small pieces and add it to the flour mixture. Use your fingertips or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the honey, egg, and milk. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped cherries.
  6. Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Pat the dough into a circle about 1 inch thick.
  7. Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges or rounds.
  8. Place the scones onto the prepared baking sheet and sprinkle the tops with turbinado sugar.
  9. Bake for 15-20 minutes, or until the scones are golden brown.
  10. Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
