  1. Preheat the oven to 190°C (375°F).
  2. Roll out the pie crust and line a pie dish with it.
  3. Peel and slice the apples, then toss them with sugar, flour, cinnamon, and lemon juice.
  4. Pour the apple mixture into the pie crust.
  5. Dot the top of the apples with small pieces of butter.
  6. Roll out the remaining pie crust and place it over the apple filling.
  7. Trim and seal the edges, then cut a few slits in the top crust to allow steam to escape.
  8. Beat an egg and brush it over the top crust.
  9. Bake for 45 minutes, or until the crust is golden brown.
  10. Allow the pie to cool for at least 30 minutes before serving.
