White velvet cake is a variation of red velvet cake, but without the addition of cocoa powder. It has a light and fluffy texture with a delicate vanilla flavor.

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg whites one at a time, then stir in the vanilla extract.

Add the flour mixture alternately with the milk, beginning and ending with the flour mixture. Pour the batter into the prepared pans.

Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and cool completely on wire racks.
