White chocolate is not technically chocolate as it doesn’t contain cocoa solids, only cocoa butter.

Preheat the oven to 180°C (350°F). Grease and flour a cake pan.

Melt the white chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and let it cool slightly.

In a separate bowl, whisk together sugar, eggs, and vanilla extract until well combined.

Gradually add the melted chocolate mixture into the egg mixture, stirring continuously.

In another bowl, sift together the flour, baking powder, and salt. Add the dry ingredients to the chocolate mixture, alternating with milk, beginning and ending with the dry ingredients.

Gently fold in the fresh raspberries.

Pour the batter into the prepared cake pan and smooth the top.

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Once cooled, spread whipped cream over the top and sides of the cake.

Garnish with fresh raspberries and white chocolate shavings.

Let the cake rest in the refrigerator for at least 1 hour before serving.
