  1. Preheat the oven to 180°C (350°F). Grease and flour three 8-inch round cake pans.
  2. In a heatproof bowl, melt the white chocolate and butter together over a pan of simmering water. Stir until smooth and then remove from heat.
  3. In a large mixing bowl, cream together the sugar, eggs, lemon zest, and lemon juice until light and fluffy.
  4. Add the melted white chocolate mixture to the creamed mixture and mix well.
  5. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  6. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
