In a bowl, combine graham cracker crumbs and melted butter. Press onto the bottom of a greased 9-inch springform pan.

In a mixing bowl, beat cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth. In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form. Fold whipped cream into the cream cheese mixture.

Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.

Refrigerate for at least 2 hours, or until set.

Remove the sides of the springform pan and serve chilled.
