  1. Preheat the oven to 180°C (350°F).
  2. Slice the leeks and rinse thoroughly.
  3. In a large frying pan, melt the butter over medium heat.
  4. Add the leeks to the pan and cook until softened, about 5 minutes.
  5. Sprinkle the flour over the leeks and stir until coated.
  6. Gradually add the milk, stirring constantly, until the mixture thickens.
  7. Remove from heat and stir in the grated cheddar cheese.
  8. In a separate bowl, beat the eggs and season with salt and pepper.
  9. Add the beaten eggs to the leek mixture and stir well.
  10. Roll out the puff pastry and line a pie dish with it.
  11. Pour the leek mixture into the pie dish.
  12. Cover the pie with another sheet of puff pastry and crimp the edges.
  13. Make a few small slits in the top of the pie to allow steam to escape.
  14. Bake in the preheated oven for 45-50 minutes, or until the pastry is golden brown.
  15. Allow the pie to rest for 10 minutes before serving.
  16. Serve hot and enjoy!
