Wacky Cake

Wacky Cake is also known as Depression Cake, as it originated during the Great Depression when ingredients like eggs and butter were scarce.

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) round cake pan.

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.

Make three wells in the dry ingredients. Pour the vegetable oil into one well, vinegar into the second well, and vanilla extract into the third well.

Pour the water over the top and mix until well combined.

Pour the batter into the prepared cake pan.

Bake for 30 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
