The Victoria sponge cake is named after Queen Victoria, who was known to enjoy a slice of sponge cake with her afternoon tea.

Ingredients
  • 200 gram Butter
  • 200 gram Caster sugar
  • 4 unit Eggs
  • 200 gram Self-raising flour
  • 2 ml Milk
  • 4 tablespoon Strawberry jam
  • 100 gram Powdered sugar
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, cream together the butter and caster sugar until light and fluffy.
  3. Beat in the eggs, one at a time.
  4. Sift in the self-raising flour and fold gently until well combined.
  5. Stir in the milk to create a smooth batter.
  6. Divide the batter evenly between two greased and lined 20cm (8-inch) round cake tins.
  7. Bake for 20-25 minutes or until golden brown and a skewer inserted into the center comes out clean.
  8. Allow the cakes to cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.
  9. Once the cakes are cooled, spread strawberry jam on one cake layer and place the other layer on top.
  10. Dust the top of the cake with powdered sugar.
  11. Serve and enjoy!
