Victoria Sponge Cake

The Victoria Sponge Cake is named after Queen Victoria, who was known to enjoy a slice of sponge cake with her afternoon tea.

Preheat the oven to 180°C (350°F).

In a large bowl, cream together the butter and caster sugar until light and fluffy.

Beat in the eggs, one at a time, mixing well after each addition.

Sift in the self-raising flour and fold gently until just combined.

Divide the batter evenly between two greased and lined 20cm (8-inch) round cake tins.

Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of the cakes comes out clean.

Remove from the oven and let the cakes cool in the tins for 5 minutes before transferring them to a wire rack to cool completely.

Once the cakes are completely cooled, spread the strawberry jam on one cake layer and top with whipped cream.

Place the second cake layer on top and dust with powdered sugar.
