Preheat the oven to 350°F (180°C) and line a 9x9-inch baking pan with parchment paper.

In a large bowl, combine the gluten-free all-purpose flour, granulated sugar, and salt.

Cut in the vegan butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Press the mixture evenly into the prepared baking pan and bake for 15 minutes.

While the crust is baking, prepare the pecan filling. In a medium saucepan, combine the pecan halves, maple syrup, vanilla extract, cornstarch, and water.

Cook over medium heat, stirring constantly, until the mixture thickens.

Remove the crust from the oven and pour the pecan filling over the top.

Return the pan to the oven and bake for an additional 15 minutes.

Remove from the oven and let cool completely in the pan.

Once cooled, lift the bars out of the pan using the parchment paper and cut into squares.
