  1. Preheat the oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. In a medium bowl, combine the gluten-free graham cracker crumbs and melted vegan butter substitute. Press the mixture into the bottom of each muffin cup to form the crust.
  3. In a microwave-safe bowl, melt the dairy-free chocolate chips. In a separate small bowl, dissolve the instant coffee granules in hot water.
  4. In a large bowl, whisk together the melted chocolate, dissolved coffee, cocoa powder, coconut milk, vanilla extract, and powdered sugar until smooth.
  5. Pour the chocolate mixture evenly over the crusts in the muffin tin.
  6. Bake for 15 minutes, then remove from the oven and let cool for 5 minutes. Transfer the pies to a wire rack to cool completely.
  7. Once cooled, top each pie with a dollop of vegan whipped topping and sprinkle with chopped pecans.
  8. Place the pies in the refrigerator to set for at least 2 hours.
