  1. Preheat the oven to 180°C (350°F) and grease 4 individual pie dishes.
  2. Roll out the shortcrust pastry and line each pie dish with it. Trim off any excess.
  3. In a saucepan, combine the custard powder, caster sugar, and milk. Whisk until smooth. Place the saucepan over medium heat and cook, stirring constantly, until the custard thickens. Stir in the vanilla extract.
  4. Peel and core the apples, then slice them into thin wedges. Toss the apple slices with lemon juice and cinnamon.
  5. Divide the custard evenly among the prepared pie dishes. Arrange the apple slices on top of the custard.
  6. Melt the butter and brush it over the edges of the pastry.
  7. Bake the pies in the preheated oven for 25 minutes, or until the pastry is golden and the apples are tender.
  8. Remove the pies from the oven and allow them to cool slightly. Dust with icing sugar before serving.
