The Simnel cake is a traditional British Easter cake that dates back to medieval times. It is often decorated with marzipan balls to represent the twelve apostles.

  1. Preheat the oven to 150°C (fan)/170°C/325°F/gas mark Grease and line an 8-inch round cake tin.
  2. In a large mixing bowl, combine the gluten-free self-raising flour, ground almonds, and caster sugar.
  3. Add the dairy-free spread, golden syrup, almond extract, and lemon zest. Mix well until all ingredients are combined.
  4. Stir in the dried mixed fruit.
  5. Pour the mixture into the prepared cake tin and smooth the top.
  6. Bake in the preheated oven for 1 hour or until a skewer inserted into the center comes out clean.
  7. Allow the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once the cake is completely cooled, brush the top with apricot jam.
  9. Roll out the marzipan on a surface lightly dusted with gluten-free flour.
  10. Carefully lift the marzipan and place it on top of the cake. Smooth it down gently.
  11. Use any remaining marzipan to create 11 small balls and place them around the edge of the cake.
  12. If desired, use a kitchen blowtorch to lightly toast the marzipan.
