Preheat the oven to 180°C (350°F) and grease a round cake tin. Heat olive oil in a pan and sauté the onions until caramelized. In a separate pan, sauté the tomatoes until soft. In a large bowl, mix the caramelized onions, sautéed tomatoes, polenta, garlic, salt, and black pepper. Transfer the mixture to the greased cake tin and bake for 30 minutes. Meanwhile, prepare the warm bean salad by mixing the mixed beans, lemon juice, fresh herbs, salt, and black pepper in a bowl. After the polenta cake is baked, let it rest for 10 minutes before serving. Serve the polenta cake with the warm bean salad on the side. Enjoy!
