  1. Preheat the oven to 350°F (175°C) and grease a 9-inch (23cm) round cake pan.
  2. In a blender, blend the avocado until smooth. Transfer to a large mixing bowl.
  3. Add the sugar, vegetable oil, and vanilla extract to the bowl with the avocado and mix well.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the avocado mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
  6. In a small saucepan, heat the water until hot but not boiling. Add the hot water to the batter and mix until smooth.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
