Shepherd’s Pie traditionally uses lamb, but this vegetarian version is just as delicious and packed with veggies!

  1. Preheat the oven to 200°C (400°F).
  2. Peel and chop the potatoes, then boil them until tender. Drain and mash with a little salt and pepper.
  3. In a large pan, heat the olive oil and sauté the onion and garlic until softened.
  4. Add the carrots, peas, vegetable stock, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper. Cook for 10 minutes.
  5. Transfer the vegetable mixture to a baking dish and top with the mashed potatoes.
  6. Bake in the preheated oven for 20-25 minutes, or until the top is golden and the filling is bubbling.
  7. Let it rest for 10 minutes before serving.
