Shepherd’s pie originated in the UK and was traditionally made with minced lamb or mutton. This vegetarian version is a delicious twist on the classic dish.

Preheat the oven to 180°C (350°F).

In a pan, heat olive oil and sauté the onion and garlic until translucent.

Add the mixed vegetables and cook for another 5 minutes.

Add the veggie burger patties and break them into small pieces with a spatula.

Season with salt, black pepper, paprika, and dried thyme. Mix well.

In a separate pot, boil the potatoes until tender. Drain and mash them with a fork or potato masher.

Add vegetable stock to the veggie burger mixture and simmer for 5 minutes.

Transfer the veggie burger mixture into a baking dish.

Spread the mashed potatoes evenly over the top.

Bake in the preheated oven for 30 minutes or until the top is golden brown.

Allow the shepherd's pie to rest for 10 minutes before serving.
