Shepherd’s Pie is traditionally made with lamb, but this vegetarian version replaces the meat with a flavorful vegetable filling.

Preheat the oven to 200°C (400°F).

Peel and chop the potatoes, carrots, onion, and garlic.

Boil the potatoes in salted water until tender. Drain and mash with a fork or potato masher.

In a large pan, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the carrots, peas, vegetable broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper to the pan. Cook for 5-7 minutes, until the vegetables are tender.

Transfer the vegetable mixture to a baking dish. Spread the mashed potatoes evenly over the top.

Bake in the preheated oven for 20-25 minutes, until the top is golden brown.
