  1. Preheat the oven to 200°C (400°F).
  2. Peel and chop the potatoes into small cubes.
  3. Boil the potatoes in a large pot of salted water until tender.
  4. Drain the potatoes and return them to the pot.
  5. Mash the potatoes with butter and milk until smooth.
  6. In a separate pan, heat olive oil and sauté the onion, garlic, carrots, celery, mushrooms, and peas until softened.
  7. Add vegetable stock, soy sauce, flour, thyme, rosemary, salt, and black pepper to the pan and stir well.
  8. Cook for a few minutes until the mixture thickens.
  9. Transfer the vegetable mixture to a baking dish.
  10. Spread the mashed potatoes evenly over the vegetables.
  11. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
  12. Let it rest for 10 minutes before serving.
