Preheat the oven to 400°F (200°C).

In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Stir in the flour and cook for 1 minute, then gradually whisk in the vegetable broth and milk.

Add the carrots, potatoes, peas, corn, thyme, salt, and black pepper. Bring to a simmer and cook until the vegetables are tender.

Transfer the vegetable mixture to a baking dish.

Roll out the puff pastry sheet and place it over the baking dish, trimming any excess pastry. Brush the pastry with beaten egg.

Bake for 25-30 minutes, or until the pastry is golden brown and the filling is bubbly.
