  1. Peel and chop the potatoes into chunks. Boil them until tender, then drain and mash with olive oil, salt, and pepper.
  2. In a large pan, sauté the onion and garlic until translucent. Add the mushrooms, carrots, and peas. Cook for 5 minutes.
  3. In a small bowl, mix the vegetable broth, tomato paste, soy sauce, thyme, and rosemary. Pour the mixture into the pan with the vegetables and simmer for 10 minutes.
  4. In a separate bowl, mix the cornstarch and water. Add the mixture to the pan and cook until thickened.
  5. Preheat the oven to 200°C (400°F). Transfer the vegetable mixture to a baking dish and spread the mashed potatoes on top.
  6. Bake for 20 minutes or until the top is golden brown.
  7. Let it rest for 10 minutes before serving.
