Preheat the oven to 350°F (175°C) and grease a round cake pan.

In a small bowl, mix together the ingredients for the crumb topping: all-purpose flour, brown sugar, ground cinnamon, and melted vegan butter. Set aside.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon for the cake batter.

Add the unsweetened applesauce, maple syrup, melted coconut oil, almond milk, vanilla extract, and apple cider vinegar to the dry ingredients. Mix well until smooth.

Pour the cake batter into the greased cake pan and spread it evenly.

Sprinkle the crumb topping over the cake batter.

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
