Ingredients
  • 2 cup Cake flour
  • 2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Unsalted butter
  • 1 1/2 cup Granulated sugar
  • 3 Eggs
  • 2 teaspoon Vanilla extract
  • 1 cup Whole milk
  • 1 box Instant vanilla pudding mix
  • 2 cup Whipped cream
  • for garnish Fresh berries
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just blended.
  5. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
  6. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Prepare the vanilla pudding according to the package instructions and let it set.
  8. Place one cake layer on a serving plate. Spread a layer of vanilla pudding on top. Place the second cake layer on top and spread the remaining vanilla pudding over it.
  9. Refrigerate the cake for at least 1 hour to allow the pudding to set.
  10. Before serving, spread whipped cream over the top of the cake and garnish with fresh berries.
