  • 1 cup Ube (Purple Yam) Powder
  • 2 cup Glutinous Rice Flour
  • 1.5 cup Sugar
  • 1 teaspoon Baking Powder
  • 1.5 cup Coconut Milk
  • 1 cup Water
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Butter
  • 0.5 cup Shredded Coconut
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a large bowl, combine the ube powder, glutinous rice flour, sugar, and baking powder.
  3. In a separate bowl, mix together the coconut milk, water, vanilla extract, and melted butter.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring until well combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 30 minutes.
  8. Sprinkle the shredded coconut over the top of the cake.
  9. Cut into squares and serve.
