Preheat the oven to 180°C (350°F).

Cook the rice according to package instructions.

In a large skillet, heat olive oil and butter over medium heat.

Add the chopped onion, garlic, and red bell pepper. Sauté until softened.

Add the chicken, cumin, paprika, salt, and black pepper. Cook until the chicken is no longer pink.

Add the chopped tomatoes and parsley. Cook for another 5 minutes.

In a separate bowl, whisk together the eggs and milk.

In a greased baking dish, layer half of the cooked rice.
