Add the frozen mixed vegetables, thyme, salt, and black pepper.

Cook until the mixture thickens.

Transfer the mixture to a casserole dish.

Roll out the puff pastry sheet and place it over the casserole dish, trimming any excess.

Cut a few slits in the pastry to allow steam to escape.

Bake for 30-35 minutes, or until the pastry is golden brown and the filling is bubbly.
