Preheat the oven to 400°F (200°C).

In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots, and cook until the vegetables are tender.

Stir in the flour and cook for 1 minute. Gradually whisk in the chicken broth and milk. Cook until the mixture thickens.

Add the turkey, peas, salt, and black pepper. Stir well to combine.

Transfer the mixture to a baking dish.

Roll out the puff pastry and place it over the baking dish. Trim any excess pastry and press the edges to seal.

Brush the beaten egg over the pastry.

Bake for 25-30 minutes, or until the pastry is golden brown and the filling is bubbling.
