  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Add onion, celery, and garlic. Cook until softened.
  3. Add turkey breast and cook until browned.
  4. Sprinkle flour over the turkey mixture and stir to coat.
  5. Slowly add chicken broth, stirring constantly until thickened.
  6. Stir in cranberry sauce, heavy cream, salt, black pepper, and dried thyme.
  7. Simmer for 5 minutes.
  8. Roll out one pie crust and place it in a pie dish.
  9. Pour the turkey mixture into the pie crust.
  10. Roll out the second pie crust and place it on top of the filling. Seal the edges.
  11. Brush the beaten egg over the top crust.
  12. Cut slits in the top crust to allow steam to escape.
  13. Bake for 30-35 minutes, or until the crust is golden brown.
  14. Let it rest for 15 minutes before serving.
