Ingredients
  • 12 ounce Trout fillets
  • 1 cup Breadcrumbs
  • 1 unit Egg
  • 1/4 cup Red onion
  • 1/4 cup Fresh parsley
  • 1 teaspoon Lemon zest
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 1/2 cup Basil leaves
  • 1 tablespoon White wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 unit Garlic clove
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. In a food processor, pulse trout fillets, breadcrumbs, egg, red onion, parsley, lemon zest, salt, and black pepper until well combined.
  2. Shape the mixture into small patties.
  3. Heat olive oil in a frying pan over medium heat. Cook the trout cakes for about 3-4 minutes on each side until golden brown.
  4. In a separate bowl, whisk together basil leaves, white wine vinegar, Dijon mustard, honey, garlic clove, salt, and black pepper to make the basil vinaigrette.
  5. Serve the trout cakes with the basil vinaigrette on the side. Enjoy!
