Tropical Kumquat Cake

Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract, kumquat juice, and kumquat zest.

Gradually mix in the flour mixture, alternating with the buttermilk. Pour the batter into the prepared cake pan.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once the cake is cooled, dust with powdered sugar and garnish with kumquat slices.
