  • 8 ounce Cream Cheese
  • 1 cup Unsalted Butter
  • 2 cup Granulated Sugar
  • 4 large Eggs
  • 2 teaspoon Vanilla Extract
  • 2 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 0.5 teaspoon Salt
  • 0.5 cup Pineapple Juice
  • 0.5 cup Shredded Coconut
  • 0.5 cup Mango
  • 0.5 cup Papaya
  • 0.5 cup Kiwi
  • 0.25 cup Powdered Sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, beat the cream cheese, butter, and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the cream cheese mixture, alternating with the pineapple juice. Fold in the shredded coconut.
  4. Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  5. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  6. Meanwhile, prepare the tropical fruit topping. Dice the mango, papaya, and kiwi into small pieces.
  7. Once the cake has cooled, sprinkle it with powdered sugar and top with the diced tropical fruits.
  8. Serve and enjoy!
