  • 200 gram Carrots
  • 250 gram All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 cup Vegetable oil
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 3 unit Eggs
  • 2 teaspoon Vanilla extract
  • 1 cup Crushed pineapple, drained
  • 1 cup Shredded coconut
  • 1 cup Chopped walnuts
  • 8 ounce Cream cheese
  • 1 cup Unsalted butter, softened
  • 2 cup Powdered sugar
  • 1 teaspoon Coconut extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots, crushed pineapple, shredded coconut, and chopped walnuts.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  9. In a mixing bowl, beat the cream cheese, softened butter, powdered sugar, and coconut extract until smooth and creamy.
  10. Once the cake has cooled, spread the coconut cream cheese frosting evenly over the top.
  11. Optional: Garnish with additional shredded coconut and chopped walnuts.
  12. Allow the frosting to set for at least 1 hour before serving.
