Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  5. Stir in the boiling water until the batter is smooth. Divide the batter evenly among the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  7. In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the semi-sweet chocolate. Let it sit for a minute, then whisk until smooth. Let the ganache cool for 10 minutes.
  8. Place one cake layer on a serving plate and spread a layer of ganache on top. Repeat with the remaining layers. Pour the remaining ganache over the top of the cake, allowing it to drip down the sides.
  9. In a small bowl, sift the powdered sugar. Dust the top of the cake with powdered sugar.
  10. Allow the cake to rest for at least 1 hour before serving. Enjoy!
