Preheat the oven to 375°F (190°C).

Roll out the pie crust and place it in a pie dish.

In a large bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.

Pour the berry mixture into the pie crust.

Dot the top of the berries with small pieces of unsalted butter.

Cover the pie with the second pie crust, sealing the edges.

Brush the top crust with beaten egg.

Make several slits in the top crust to allow steam to escape.

Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
