Preheat the oven to 375°F (190°C).

In a large bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.

Roll out one pie crust and place it in a pie dish. Pour the berry mixture into the crust.

Dot the top of the berry mixture with small pieces of butter.

Roll out the second pie crust and place it on top of the berry mixture. Seal the edges and cut slits in the top crust to allow steam to escape.

Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.

Remove from the oven and let it cool for at least 2 hours before serving.

Serve the triple berry pie with whipped cream or vanilla ice cream, if desired.
