  • 1 cup Prunes
  • 1/2 cup Cherries
  • 1/2 cup Mixed Peel
  • 1 cup Rum
  • 1 cup Butter
  • 1 cup Brown Sugar
  • 4 unit Eggs
  • 2 teaspoon Vanilla Extract
  • 1 teaspoon Almond Extract
  • 1 teaspoon Baking Powder
  • 2 cup All-Purpose Flour
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Ground Cloves
  • 1/2 teaspoon Salt

Instructions
  1. In a large bowl, combine raisins, currants, prunes, cherries, mixed peel, and rum. Let it soak overnight.
  2. Preheat the oven to 325°F (165°C). Grease and line a cake pan.
  3. In a separate bowl, cream together butter and brown sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and almond extract.
  4. In another bowl, whisk together all-purpose flour, baking powder, ground cinnamon, ground nutmeg, ground cloves, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the soaked fruit mixture. Mix well.
