Trinidad Black Cake
Trinidad Black Cake is a traditional Christmas cake in Trinidad and Tobago, made with rum-soaked fruits and spices.

In a large bowl, combine raisins, currants, prunes, cherries, mixed peel, and rum. Let it soak overnight.

Preheat the oven to 325°F (165°C). Grease and line a cake pan.

In a separate bowl, cream together butter and brown sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and almond extract.

In another bowl, whisk together all-purpose flour, baking powder, ground cinnamon, ground nutmeg, ground cloves, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the soaked fruit mixture. Mix well.

Pour the batter into the prepared cake pan and smooth the top. Bake for 3 hours or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Once cooled, wrap the cake in aluminum foil and let it rest for at least 24 hours before serving.
