  1. Preheat the oven to 220°C (425°F). In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. Cut the cold butter into small cubes and add it to the dry ingredients. Use your fingertips or a pastry cutter to rub the butter into the flour mixture until it resembles coarse crumbs.
  3. Make a well in the center of the mixture and pour in the cold buttermilk and vanilla extract. Stir until just combined.
  4. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a 2-cm (3/4-inch) thick round.
