Ingredients
  • 2 cup Farro
  • 4 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Zucchini
  • 1 cup Cherry tomatoes
  • 1 cup Feta cheese
  • 4 large Eggs
  • 1 cup Milk
  • 2 tablespoon Fresh basil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. Cook the farro according to package instructions, using vegetable broth instead of water.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  4. Add the sliced zucchini and cook until tender.
  5. In a large bowl, whisk together the eggs, milk, salt, and black pepper.
  6. Add the cooked farro, sautéed vegetables, cherry tomatoes, crumbled feta cheese, and chopped fresh basil to the egg mixture. Stir well to combine.
  7. Grease a pie dish with olive oil. Pour the farro mixture into the dish.
  8. Bake for 40 minutes, or until the top is golden brown and the center is set.
  9. Allow the savory farro pie to rest for 10 minutes before serving.
