  1. Preheat the oven to 375°F (190°C).
  2. Press the tofu to remove excess moisture, then cut it into small cubes.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the onion, carrot, celery, and garlic. Sauté until the vegetables are tender.
  4. Add the tofu cubes and frozen peas to the skillet. Cook for another 5 minutes.
  5. Sprinkle the flour over the tofu and vegetable mixture. Stir well to coat.
  6. Gradually pour in the vegetable broth and soy sauce, stirring constantly. Cook until the mixture thickens.
  7. Stir in the dried thyme, salt, and black pepper.
  8. Transfer the mixture to a baking dish.
  9. Roll out the puff pastry and place it over the baking dish, trimming any excess pastry.
  10. Bake for 25-30 minutes, or until the pastry is golden brown.
  11. Let the pot pie rest for 10 minutes before serving.
