  1. Brew a cup of strong coffee and set aside to cool. In a mixing bowl, beat the mascarpone cheese, whipped cream, sugar, and vanilla extract until well combined and creamy. Dip the ladyfinger biscuits in the cooled coffee and arrange a layer in the bottom of a springform pan. Spread a layer of the mascarpone mixture on top of the ladyfingers. Repeat the layers until all the ladyfingers and mascarpone mixture are used, ending with a layer of mascarpone mixture on top. Dust the top with cocoa powder. Cover the pan with plastic wrap and refrigerate for at least 4 hours or overnight. Before serving, remove the sides of the springform pan and dust with additional cocoa powder if desired. Enjoy!
